If you haven’t picked up on it yet- I am a HUGE breakfast fan and would love to eat breakfast food for every meal. I think that eggs (of course!) are still my favorite option to keep me full the longest but, unfortunately, my 3 year old is a bit picky…
Are you an oatmeal fanatic like I am?! I love making a large pot of oatmeal and eating it throughout the week. Oats are amazing- full of fiber and good things.
But Millet? Have you heard of it? I first discovered millet when the above mentioned 3-year old was being introduced to grains as a chubby 6 month old. I knew I didn’t want him eating a bunch of white rice cereal because it was nutritionally pointless. Millet was his first grain and I keep coming back.
Honey Crisp Millet Morning Cereal
- 1 Cup Dry Bob’s Red Mill Millet (cook according to package instructions, adding an additional 4 oz of water or milk/milk alternative)
- 2 Tbsp Coconut Oil or Butter
- 1 Honey Crisp Apple, sliced and diced
- Honey to taste
- 4 Tbsp Cinnamon (more or less according to taste)
- Toppings: Walnuts, Dried Coconut, Craisins (optional)
Following package instructions, cook the millet in a pan. While it’s simmering, slice a honey crisp apple. Some of the slices were paper thin, but some others were left in chunks. The apples I had were HUGE so I only used about 3/4 of it. When the Millet is done cooking, stir in cinnamon, coconut oil or butter and apples and cover back with a lid for about 5 minutes until the apples are barely softened.
Oh, yep. He loves it!
There is also something magical about Honey Crisp Apples- I can only find them in the fall and I look forward to them every year. It’s a sign to me that cooler days, more colorful leaves and smokey fires are in my near future. You can use other kinds of apples, but the magic of the honey crisp will be lacking… 😉
